Recipe of traditional Mexican romeritos

Today we will learn to prepare this traditional Mexican Christmas dish: the romeritos, also known in some places as "jumble".

Please note that for this recipe you will need to have prepared a good poblano mole beforehand , of which we will use 6 cups. Also keep in mind that we need this mole to be smooth, and not so creamy or thick.

The ideal (and the richest) is to use homemade mole. If for some reason you do not have time to prepare it, then use two cups of mole pasta and four cups of chicken stock. Dissolve the pasta in this liquid, and go.

Finally (and just in case), keep in mind that romeritos are not the same as rosemary, so do not be confused when you buy the ingredients.

Homemade Christmas Romeritos

Rece ta cooking to prepare, step by step, the most traditional dish of Mexican Christmas.First, we will remove the parts that we do not need, such as the remains of roots. Then, we will make sure to wash them well to remove the dirt residues.
  • Next, we will peel garlic cloves. We are also going to peel the potatoes and chop them into cubes.
  • To continue, we will heat a pot with a little water. Since the water is hot, we will add the clean romeritos, the cubes of potatoes, a little salt to taste, the piece of onion (peeled) and the garlic. Let them cook for 20 minutes.
  • When the 20 minutes have passed, we will drain the vegetables and remove the garlic and onion. We will reserve them.
  • Regarding the nopales, we will cut them into strips and we will also boil them with salt, but for less time: only five minutes. Likewise, we will drain them and reserve them.
  • Then, soak the shrimp in water to Remove excess salt. Meanwhile, heat the mole.
  • When the mole is hot, add the romeritos , potatoes and nopales.
  • The following will drain the shrimp and add them to the mass. Then, mix everything and let it cook over low heat, while we prepare the pancakes.
  • To make the pancakes, we will separate the yolks and whites from the eggs. Then we will take the latter and beat them to the point of snow.
  • When we have the clear ready, we will add the yolks. First we will add only one, and we will mix it until it is fully integrated and then, we will do the same with the second one.
  • On the side, mix the bread, the baking powder and the shrimp powder in a cup. Only when the powders are well mixed together, we will integrate them into the eggs and beat them, until we obtain a homogeneous consistency.
  • With this mixture, let's prepare the shrimp pancakes. For this, we will make half-flat balls, with the equivalent of a big spoonful of pasta.
  • To fry them, we will heat a frying pan with a little oil. When the oil is hot, we will fry the pancakes.
  • We will let you Brown on the one hand, before turning them over and let them fry on the other side. When removing them, we will put them in a dish covered with a sheet of absorbent paper, to remove excess fat.
  • Then, pass the shrimp pancakes to the bowl with the mole and the romeritos, and mix everything well.
